Chocolate Mint Fudge

10 oz. semi sweet chocolate chips or dark chocolate of your choice

1 can (14 oz.) condensed milk

2 tsp. mint extract

1 cup white chocolate

3 drops green food coloring


Melt the dark chocolate with one cup of the condensed milk in the microwave (in one minute increments, stirring each time to prevent overheating) in a double boiler. Stir until smooth, then add 1 tsp of mint extract. Stir to combine. Pour half of the fudge into a 8x8 pan lined with foil and sprayed with cooking spray. Smooth with an offset spatula. Layer should be very thin. Chill in refrigerator for 10 minutes. Reserve remaining half at room temperature. Combine white chocolate and remaining condensed milk. Melt with same method as dark chocolate, stirring frequently. Stir in 1 tsp of mint extract and 3 drops food coloring, adjusting to taste and color. Once smooth and combined, pour over the chocolate fudge and spread into a thin even layer. Chill for 10 minutes. Once firm, spread the reserved chocolate on top of the white layer. Melt as needed to make a spreadable consistency. Smooth into an even layer and chill completely in the refrigerator for approximately 1 hour. Once firm, lift out of pan using foil as handles. Cut into small 1 inch pieces to serve. Can be store in airtight container in refrigerator for up to 2 weeks.
