Lemon Drop Candies

1 cup sugar

1/4 cup corn syrup

3-4 Tablespoons of water

2 tsp citric acid

2-3 drops yellow food color

1/8 tsp lemon oi


Line a 5x7 pan with parchment paper. ln a medium saucepan, stir together the white sugar, corn syrup, and water. Cook, stirring, over medium heat until sugar dissolves, then bring to a slow boil. Without stirring, using a candy thermometer, heat to 300 to 310 degrees F (149 to 154 degrees C). Remove from heat and stir in citric acid, lemon oil and food coloring. Pour into pan. Let it cool briefly (up to 4 minutes) until soft enough to cut. Using kitchen scissors, cut into desired shapes. Dust with powdered or fine sugar to keep from sticking.
